Ingredients

peel of 3 lemons
juice of 2 lemons
water
sugar
2 tsp glycerine
1 cap of Cointreau

Method

1. Peel lemons into a saucepan.
2. Add water and sugar.
3. Boil for 5 minutes.
4. Leave to cool, then pour into container and put in the fridge (including the bits of peel).
5. When cold, add glycerine, lemon juice and Cointreau and return to the fridge.
6. Pour into ice-cream maker and follow manufacturer’s instructions.



Ginger Liqueur

Ingredients

You will also need a 275ml glass bottle to store the liqueur in. I used an empty lemon juice bottle.

Method

  1. Peel, rinse then dice the ginger.
  2. Put vodka and ginger in a glass jug and bruise the ginger with the back of a spoon.
  3. Gradually add sugar until the liquid is saturated (no more will dissolve).
  4. Using a funnel, transfer to a glass bottle and seal. Leave to sit in a cool, dark place for for at least a week before drinking. You might want to make a label for your liqueur.

This liqueur is best served neat, or with lemonade.
