Baked Sweet Potato
This makes a nice side dish or snack, and a healthy alternative to fried potato.
Ingredients
- Any number of sweet potatoes
- Olive oil (or substitute sunflower or other vegetable oil)
- Freshly ground black pepper
- Mild chilli powder blend (paprika, chilli powder, oregano, cumin) - about 1tsp per potato
- Salt (flakes or fine granules)
Method
Peel the sweet potato. This isn't strictly necessary - you can leave the skin on - but as it's easy to do I prefer to remove it. Chop into inch-thick slices or cubes.
Place sweet potato slices into a bowl and coat with (but don't submerge in) olive oil. Sprinkle on the chilli powder and add some pepper.
Place on a baking tray and bake at 160C until soft (about 40 minutes, but it depends on slice thickness and shape).
Stir the pieces so they are covered with any remaining oil on the tray, then grind some more black pepper over them. Add salt to taste.
