Recipe: Beef casserole

Ingredients
- casserole beef
- 2 vegetable stock cubes
- 1 onion
- a few carrots
- part tin of chopped tomatoes, or 1 or 2 fresh ones
- vegetable oil
- dried mixed herbs
- 1 or 2 bay leaves
- water
- cornflour
- (optional) add some garlic and/or a little red or white wine with the stock
Special equipment
Method
- Preheat oven to 170 C
- Dice onion and carrots.
- Fry the beef in a little oil in small batches on a medium-high heat until it looks slightly burnt.
- Put beef, onion and carrots, bay leaf, tomato and herbs into casserole pot.
- Boil a kettle of water and pour into pot. Crumble stock into the mixture.
- Put lid on and place on middle shelf of oven.
- Leave for an hour then check that everything is still below water - add some more if not.
- Leave for a further hour.
- Mix up a couple of tsp of cornflour with a tbsp of cold water, then add to the pot.
- Return to the oven for 15 minutes.
- Serve with mashed potatoes and peas, or with nice bread.
