Recipe: Beef casserole

Ingredients

  • casserole beef
  • 2 vegetable stock cubes
  • 1 onion
  • a few carrots
  • part tin of chopped tomatoes, or 1 or 2 fresh ones
  • vegetable oil
  • dried mixed herbs
  • 1 or 2 bay leaves
  • water
  • cornflour
  • (optional) add some garlic and/or a little red or white wine with the stock

  • casserole pot with lid

Method

  1. Preheat oven to 170 C
  2. Dice onion and carrots.
  3. Fry the beef in a little oil in small batches on a medium-high heat until it looks slightly burnt.
  4. Put beef, onion and carrots, bay leaf, tomato and herbs into casserole pot.
  5. Boil a kettle of water and pour into pot. Crumble stock into the mixture.
  6. Put lid on and place on middle shelf of oven.
  7. Leave for an hour then check that everything is still below water - add some more if not.
  8. Leave for a further hour.
  9. Mix up a couple of tsp of cornflour with a tbsp of cold water, then add to the pot.
  10. Return to the oven for 15 minutes.
  11. Serve with mashed potatoes and peas, or with nice bread.
