Failed Cinnamon Rum
I think it's important to document failures as well as successes, so that others can avoid making the same mistakes. This recipe/method was suggested by several major food blogs (naming no names) and I am left wondering if they actually made it! The liquor gained none of the flavours I think of as 'cinnamon' but instead a very bitter earthy taste.
I suspect that heat may be required to extract cinnamon flavour - boiling water or syrup with cinnamon would produce better results.
Ingredients
- cinnamon stick
- rum
Method

- Leave the cinnamon stick submerged in rum for a week in the fridge.
