Kachumber - tomato and cucumber salad
Ingredients
- half a cucumber, chopped
- half an onion (white or red), finely chopped
- half a chilli, very finely diced
- 100g tomatoes (see below), chopped
- 1tsp lime juice, fresh or bottled
- pinch of sugar
- pinch of salt
- small bunch of coriander leaf (cilantro), coarsely chopped
Use more cucumber if you want a milder kachumber.
Tip: freeze fresh chillis, then cut them when they are frozen. They will still chop easily, but they won't burn your hands.
Tomatoes: always look for very red tomatoes. I find Waitrose's loose on-the-vine cherry tomatoes have the best flavour, but they're quite expensive (about £7/kg at the time of writing).
Method
- Mix the chopped vegetables and cilantro.
- Slowly add the lime juice, sugar and salt, tasting frequently to get the right balance.
- Leave to sit for 20 minutes to an hour in the fridge. This will let the heat from the chilli spread more evenly.
