Recipe: Lemon and garlic chicken

1 hourIf you can't spare the time to marinade the chicken, add lemon juice with the garlic instead.
Ingredients
- 1 medium chicken breast per person - fresh or fully defrosted
- 1/2 clove of garlic per chicken breast, finely chopped or crushed
- pinch of dried oregano or mixed herbs (optional) - dried herbs are quite potent so you don't need to add much
- a few tsp of sunflower oil
- juice of 1 lemon, or bottled equivalent
- salt and pepper
Method
- Cut the chicken into smaller pieces - 1" cubes or just into thinner slices.
- Put the chicken pieces in a bowl and cover with the lemon juice and a little salt and pepper.
- Leave for 30mins then drain off the liquid.
- Put the oil in a frying pan on a medium-low heat.
- When the oil is hot, add the chicken and stir-fry until cooked on the outside (i.e. white all over).
- Add the garlic and dried herbs and continue to fry until the chicken is cooked through - cut a few of the thickest pieces open to check.
