Recipe: Mince Pies

This recipe's not one of my own, but I don't know the original source. What sets it apart from other mince pie recipes is the crunchy almond topping. Ingredients

  • shortcrust pastry (I buy fresh pre-made from the supermarket)
  • mincemeat (I use Sainsbury's Taste the Difference)
  • whites of 2 eggs
  • 75g sugar
  • 75g ground almonds
  • 15g flaked almonds
  • 3 glace cherries, quartered
  • a little butter for greasing

Method

Makes 12.

  1. Grease the tray.
  2. Roll out pastry and cut into circles. Put into tray.
  3. Put about 1-2 teaspoons of mincemeat into each pie.
  4. Whisk egg whites until the stiff peaks stage, then whisk in the sugar.
  5. Fold in the ground almonds.
  6. Spoon some of the mixture onto each pie, and flatten to cover.
  7. Add a cherry quarter.
  8. Bake for 15 mins at 180C until golden brown.
