Recipe: Mince Pies
This recipe's not one of my own, but I don't know the original source. What sets it apart from other mince pie recipes is the crunchy almond topping. Ingredients
- shortcrust pastry (I buy fresh pre-made from the supermarket)
- mincemeat (I use Sainsbury's Taste the Difference)
- whites of 2 eggs
- 75g sugar
- 75g ground almonds
- 15g flaked almonds
- 3 glace cherries, quartered
- a little butter for greasing
Method
Makes 12.
- Grease the tray.
- Roll out pastry and cut into circles. Put into tray.
- Put about 1-2 teaspoons of mincemeat into each pie.
- Whisk egg whites until the stiff peaks stage, then whisk in the sugar.
- Fold in the ground almonds.
- Spoon some of the mixture onto each pie, and flatten to cover.
- Add a cherry quarter.
- Bake for 15 mins at 180C until golden brown.
