Recipe: Roast Potatoes

Ingredients
- red potatoes
- saucepan of cold water
- dried rosemary
- vegetable oil - olive or sunflower work well
Method
- Preheat the oven to 190C and make sure there's a free shelf at the top.
- Peel potatoes and cut into egg-sized pieces. Put into the saucepan.
- Pour enough oil into a deep tray to coat the bottom. Place in the oven at the top.
- Bring to the boil, then simmer on medium heat for 10 minutes.
- Drain potatoes fully, then shake with the saucepan lid on to bruise the surface of the potatoes.
This will make them crispy later.
- Carefully, remove the tray from the oven and put the potatoes into the hot oil.
- Using a spoon or a spatula flip the potatoes so all sides are coated.
- All the oil should now be on the potatoes - if you still have some on the bottom of the tray drain
it off and use a little less oil next time.
- Put back into the oven. Leave them alone for 45 minutes, remove and serve immediately.
