Recipe: Roast Potatoes

Ingredients

  • red potatoes
  • saucepan of cold water
  • dried rosemary
  • vegetable oil - olive or sunflower work well

Method

  1. Preheat the oven to 190C and make sure there's a free shelf at the top.
  2. Peel potatoes and cut into egg-sized pieces. Put into the saucepan.
  3. Pour enough oil into a deep tray to coat the bottom. Place in the oven at the top.
  4. Bring to the boil, then simmer on medium heat for 10 minutes.
  5. Drain potatoes fully, then shake with the saucepan lid on to bruise the surface of the potatoes. This will make them crispy later.
  6. Carefully, remove the tray from the oven and put the potatoes into the hot oil.
  7. Using a spoon or a spatula flip the potatoes so all sides are coated.
  8. All the oil should now be on the potatoes - if you still have some on the bottom of the tray drain it off and use a little less oil next time.
  9. Put back into the oven. Leave them alone for 45 minutes, remove and serve immediately.
