{"id":114,"date":"2019-07-07T23:30:56","date_gmt":"2019-07-07T23:30:56","guid":{"rendered":"https:\/\/www.ryanlothian.com\/food\/?p=114"},"modified":"2019-08-26T20:08:40","modified_gmt":"2019-08-26T20:08:40","slug":"thai-massaman-curry","status":"publish","type":"post","link":"https:\/\/www.ryanlothian.com\/food\/2019\/07\/thai-massaman-curry\/","title":{"rendered":"Thai massaman curry"},"content":{"rendered":"<p><img decoding=\"async\" class=\"size-full\" src=\"https:\/\/www.ryanlothian.com\/food\/wp-content\/uploads\/2019\/06\/IMG_20190608_190938.jpg\" data-wpid=\"30\" \/><\/p>\n<ul>\n<li>5 shallots<\/li>\n<li>3 big cloves of garlic, crushed to a paste<\/li>\n<li>2cm cube of ginger, finely chopped<\/li>\n<li>handful of cashew nuts<\/li>\n<li>two medium sized potatoes, boiled until tender<\/li>\n<li>1 tin of coconut milk<\/li>\n<li>2 tsp of spice blend (3 parts cumin, 3 black pepper, 1 cinnamon, 1 all spice, 1 ground cloves)<\/li>\n<li>fresh lime juice<\/li>\n<li>soy sauce<\/li>\n<li>brown sugar<\/li>\n<\/ul>\n<p>Fry the shallows, garlic, ginger in some oil in a non-stick pan. Don&#8217;t stir too much, let it brown and almost burn. Then add spices for a minute or two stirring well.<img loading=\"lazy\" decoding=\"async\" class=\"wp-image-116 alignnone size-full\" src=\"https:\/\/www.ryanlothian.com\/food\/wp-content\/uploads\/2019\/06\/IMG_20190608_151652.jpg\" width=\"4048\" height=\"3036\" srcset=\"https:\/\/www.ryanlothian.com\/food\/wp-content\/uploads\/2019\/06\/IMG_20190608_151652.jpg 4048w, https:\/\/www.ryanlothian.com\/food\/wp-content\/uploads\/2019\/06\/IMG_20190608_151652-300x225.jpg 300w, https:\/\/www.ryanlothian.com\/food\/wp-content\/uploads\/2019\/06\/IMG_20190608_151652-768x576.jpg 768w, https:\/\/www.ryanlothian.com\/food\/wp-content\/uploads\/2019\/06\/IMG_20190608_151652-1024x768.jpg 1024w, https:\/\/www.ryanlothian.com\/food\/wp-content\/uploads\/2019\/06\/IMG_20190608_151652-1568x1176.jpg 1568w\" sizes=\"auto, (max-width: 4048px) 100vw, 4048px\" \/>Puree the ginger, garlic, cashews, half the shallots and half the potatoes with the coconut milk. Add water if it&#8217;s too thick. Add the unpureed shallots back in. Cook whatever is going into it (chicken, beef, veges) separately.
