Turkey chili

Ingredients

  • 1lb of ground turkey (aka turkey mince)
  • 1 or 2 can of black beans
  • 28oz of cento san marzano tomatoes
  • half a tin of tomato paste
  • 3 cloves of garlic, smushed
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeno, deseeded, diced
  • chicken bouillon paste
  • spices:
    • 1 tsp ground cumin
    • 1 tsp smoked paprika
    • 1/2 tsp oregano
    • 1/2 tsp black pepper, ground
    • 1 dried guajillo pepper, ground
  • lemon juice

Method:

  1. Fry onion for 10 mins in a little olive oil, with some salt.
  2. Add spices, garlic, tomato paste.
  3. Add tomatoes, roughly chopped.
  4. Simmer 20 mins.
  5. Puree 1/2 of the mixture.
  6. Add beans, including the liquid from the can.
  7. Fry turkey separately and drain off excess fat. Add turkey to main pot.
  8. Add bell pepper and jalapeno.
  9. Add boullion paste and lemon juice to taste.
  10. Simmer 30 mins.
  11. Garnish with grated parmesan, red onion, cilantro (coriander leaf), and avocado.

Best served the next day.
